Sixty years ago, when pasteuriza on procedures were legislated, we lacked the scientific knowledge to understand why some milk was not clean. Today, we have full knowledge of how to produce safe, clean raw milk through scientific research and on farm bacteria testing. That’s why in recent studies, the number of outbreaks from raw milk has drastically reduced, with pasteurized dairy now being much more likely to cause adverse health effects due to ultra-pasteurizing and homogenizing.
